Potato Salad in Your Gumbo? A Blog.

I posed this question on Twitter the other day, and was fascinated by the different responses to this simple question. I felt compelled to write about this.

I had 74 responses to this question with 41 saying "Yes," 27 saying "No," and 6 saying "I'm staying outta this shit." Now that's fucking scientific research for you.


Here is where I stand on this controversial issue. Yes to PSIG only with the right potato salad, and only with Chicken & Sausage Gumbo. Never in Seafood Gumbo. What is the right potato salad you ask? Great question. To me, it's the cold mustard based potato salad with as little crunch as possible. Never warm potato salad. Also, this rules out my own precious mother's potato salad. This is very fucking serious. She does a mayo based, crunchy potato salad as if we are at a country club. Perfectly cubed potatoes with a slight snap when you bite into them, along with onions and celery that make a very crunchy texture. Sorry mom, but never in the gumbo.

Some of the hard "No's" from the initial question were from New Orleans. And I have to think they thought I meant Seafood Gumbo. I would never.


A good Seafood Gumbo should not be touched and should only have a light amount of rice, because the flavor is too good as is. And not to downplay a good Chicken & Sausage gumbo, but Seafood Gumbo is sacred.


And yes, Chicken & Sausage Gumbo can be great by itself, adding the cold mustard potato salad can take it to another level. Place it on top and spoon in a little every bite. Heaven. Again...this is just science.
